- The recipe you are looking for is called Fattigmand. My grandmother makes
- this too. This is not her recipe but is one I found in her church's cookbook.

- 4 egg yolks
- 1/4 cup heavy cream
- 1/3 cup granulated sugar
- 1 2/3 cups sifted flour
- 1/4 t. salt
- 1/4 to 1/2 t. cardemom (to suit taste)

- Beat egg yolks until light. Add whipped cream and sugar and beat well. Add
- flour, salt, and cardemom. Chill dough several hours. Roll small amount of
- dough at a time to a little less than 1/8 inch thickness (thinner if you
- like). Cut in 1 x 3 inch strips with pastry wheel, cutting ends diagonally.
- Make a lengthwise slit in the center of each strip, and pull one end through.
- (Special cutting rollers are available in Scandinavian delis.) Fry in hot,
- deep fat (350 degrees) until lightly browned, turning once. Drain on paper
- towels. When cold, sprinkle with confectioner's sugar.
